Parmigiano-Reggiano and Lactose Intolerance:
The Magic of Nature
When we welcome visitors to our barn and dairy in the Castrignano Valley, there’s one question that comes up often: “Can people who are lactose intolerant eat our Parmigiano-Reggiano?”
The answer is yes, it’s completely safe. But the real surprise for our visitors comes when we reveal the paradox of this cheese: it takes a full 16 liters of fresh milk—rich in its original lactose—to make just one kilogram of Parmigiano-Reggiano, and yet… there’s no lactose left in the finished product!
How is it possible that such a large quantity of milk is transformed into a food completely free of this sugar?

A natural process, not a laboratory chemical reaction
Today, there are many “lactose-free” products on the market that undergo chemical treatments or have enzymes (lactase) artificially added to break down the lactose. In the case of Parmigiano-Reggiano, none of this is necessary: the absence of lactose is a natural result enshrined in the millennia-old rules of its artisanal production, without any synthetic intervention.
Where Does Lactose Go? The two key stages
The miracle of lactose removal takes place in just a few hours through two extraordinary biological and mechanical processes:
Whey separation: During processing in the vat, the addition of rennet causes the curd to coagulate. Almost all of the whey—that is, the aqueous component in which lactose is dissolved—is drained off right from the very beginning.
Lactic acid fermentation: During the first 24–48 hours of the cheese’s life, the indigenous lactic acid bacteria present in the milk become active and voraciously consume the remaining sugar residues, converting them entirely into lactic acid.
As early as 12 hours after production, certified laboratory analyses show that lactose levels drop below detectable limits.

Official recognition and aging processes
The complete absence of lactose in Parmigiano-Reggiano is not merely an empirical observation or a tradition passed down through the generations, but is also officially recognized by the Ministry of Health.
Furthermore, the extended aging process—whether it’s our 24-month, 30-month, rich 36-month, or extraordinary 60-month varieties—ensures that the proteins mature to such an extent that the cheese is exceptionally easy to digest, even for those with significant digestive sensitivities, while preserving all the nutritional properties of high-quality mountain milk.
A genuine connection, from farm to table
Knowing that the fruit of our daily labor in our barn—using milk from our own herd of gray Apennine cows—is transformed into a product so pure, authentic, and accessible even to those with food intolerances is a source of great pride for us.
The next time you shave a slice of Parmigiano-Reggiano, you’ll know that behind that unique flavor lies the perfect balance between nature’s bounty and the wisdom of an ancient tradition.
